Snow in May

We got some snow last night after two whole weeks of lovely sunshine and warmth.

This weekend apparently didn't get the memo that we liked the warmth because it is 34 degrees, wet and white.
Brrr!

Homemade Teething Popsicles

Okay, I don't actually own a popsicle maker set {[is that what they're called??]} so I used double shot glasses and baby spoons.
 
Sure, popsicle sticks would work in these glasses too but the only sticks I have are skewers. Besides, colors are fun!


 I used bananas and strawberry yogurt because it's what I had on hand. You could add fresh or frozen fruit to vanilla or plain yogurt if you so desire.

Mix your ingredients together.
{[If you're using fruit, whether fresh or frozen, you'll need to puree them in a blender.]}


 Add whatever you'll be using for holding sticks, and cover with foil.
Freeze.


Remove from cups & enjoy!

Homemade Almond Milk

Last recipe post today, I promise.

So who here loves almond milk?? - I do, I do!!

So when I saw this post on Kitchen Simplicity for homemade almond milk, I died a little. Okay, not really, but I was super excited!

Not to mention, I have all the ingredients sitting in my pantry as we speak. Yes!

What you'll need:
1 cup, raw almonds
3 1/2 cups, water {[plus more for soaking]}
pinch sea salt
2 tsp, vanilla, optional
1/4 tsp, cinnamon, optional
2 Tbsp, maple syrup, optional

 Pick and choose your optional mix-ins or use them all for a delicious beverage that tastes great on it’s own.

Directions:
 Place almonds in a bowl. Cover with enough cold water that the almonds are completely submerged. Set aside and let soak overnight {[or at least 8 hours]}.
Drain and rinse the almonds, place in your blender along with 3 1/2 cups fresh water. Cover and process on the highest setting for one minute.
Line a fine mesh sieve with cheesecloth. Pour the almond mixture through the cheesecloth. Gather the ends of the cheesecloth and, using your hands, squeeze out as much liquid from the almonds as possible. Discard or save the almonds for another use.
Whisk in sea salt along with desired flavorings. Pour into a storage container and refrigerate {[let sit for a couple hours before using for best flavor]}.
Stir or shake before use. This should stay good for up to 5 days.

Makes: 3.5 cups

White Chocolate Lemon Truffles

Here is another recipe that showed up on my Facebook news feed. This one looks so sweetly delicious!

I did some searching on whose original recipe this is and came up with Sugarcoated's post here, who found it via Kitchen Simplicity. {[a lot of good recipes there, I might add]}

 
 Makes 24 truffles.

Ingredients:
1 cup, white chocolate
5 Tbsp, unsalted butter
3 Tbsp, heavy cream
pinch salt
1 tsp, lemon extract
icing sugar, for dusting

Directions:
Melt chocolate, butter and cream over a double boiler or in a microwave. Stir until smooth.
Stir in salt and extract.
Allow to cool slightly before covering with plastic wrap.
Refrigerate for 2 hours or until firm enough to handle.
With a melon baller or small spoon, scoop out mixture and form into 1 inch balls.
Toss with icing sugar to coat.

Store covered in the fridge for up to one week or freeze for longer storage.

Kentucky Fried Chicken's Biscuits Recipe

I saw this recipe for KFC's biscuits on my Facebook news feed. And if anyone knows me at all, I absolutely love their biscuits! They're so warm, soft, and melt-in-your-mouth delicious. So you can bet your bottom I will be making these maybe tonight or in the following week.

Ingredients
1 1/2 cups flour
1 1/2 teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening
Directions
Preheat oven to 425ºF.
Sift together flour, salt, sugar and baking powder into mixing bowl.
Make a well in the flour mix and add the milk.
Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed.
Add milk, if needed to form, and mix.
Turn onto floured board, and knead gently 6 to 8 times.
Pat dough to 1/2-inch thickness.
Cut into biscuits.
Place on baking sheet and brown in oven 10-13 minutes.
Makes about 9 biscuits.

Happy Easter!


Today {[3/31/13]} is these handsome boys' first Easter! (Harper's 3rd, just in case you were wondering.)

I don't believe in lying to my children and telling them "The Easter Bunny" brought them this and that. That's not what Easter is about. So there was no surprise gift visit from a creepy rabbit, no.

I instead downloaded some educational and meaningful kid movies for everyone.

Veggie Tales: 'Twas the Night Before Easter.
It was a really cute movie, actually. I grew up watching the Veggie Tales movies with my family on Sundays for FHE (family home evening.) What no better way to easily share gospel stories to my children than through talking vegetables!

The other movie item I downloaded was mainly for Harper since she LOVES Dora the Explorer.
It took me awhile to find the Easter episode, but it was worth it.

Happy Birthday To My Favorite Husband!

Today {[3/28/13]} is Chris' birthday and the kids had a blast coloring a banner sign we made for him. So much fun that they ended up giving the kitchen floor a splash of color. Haha, oops! Good thing it was only crayon.
 

I think it turned out beautiful. Daddy will definitely love it when he sees it tonight!
 

My surprise to my handsome husband on his special day is his favorite meal AND dessert; Chinese food {[orange chicken}] and mint chocolate chip ice cream. Yum!

A Fresh, New Start

Wow. This blog has not been accessed in years. I am not kidding. As you probably noticed by the few previous posts herehere, and here, they are dated two-thousand and nine! Just before I moved, met, and married my darling husband.

It's great to re-read past posts though. It helps me remember the person I used to be. Yes, I have changed dramatically since eloping and having three gorgeous babies!

But I wouldn't change anything. A lot has happened, good and bad, but I have learned from every mistake I've made and every success I've succeeded at.

So here's to the new-old blog of Jen Humphrey. Cheers!
